David Carter

You might not know David Carter from his accomplishments as a defensive lineman on the field, but you might know him now as one of the few (if not the only) 300-lb vegan player in the NFL. Originally with the Raiders, Carter was struggling with tendonitis throughout his body. After watching a documentary on veganism, he learned that his diet may have been a factor in his physical ailments.

He gave up meat and dairy, but with those things, he also gave up over 40 pounds, dropping him to 245, a paltry weight for a lineman. He’s now back at 300 and with the Chicago Bears, perhaps due to his off-beat, smoothie-heavy diet.

Here it is, from GQ:

Breakfast
Oatmeal with hemp protein, bananas and berries

Snack
20 ounce smoothie made with cannellini beans, banana, strawberries, and spirulina

Lunch
Brown rice and black beans topped with avocado and cashew cheese

Snack
Another 20 ounce smoothie

Another lunch
More of the brown rice and black bean combo

Snack
Another 20 ounce smoothie

Dinner
Couscous with onion and garlic, and spinach salad with bell peppers

Snack
Another 20 ounce smoothie

That sure is a lot of smoothies, but you can’t argue with results.
